  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. In a mixing bowl, combine the gluten-free soy sauce, honey (or maple syrup), rice vinegar, garlic powder, ground ginger, and cornstarch mixed with water. Whisk until smooth.
  2. Cut the chicken into bite-sized pieces and place them in a large bowl. Pour the teriyaki marinade over the chicken, ensuring every piece is well coated. Cover and let it marinate in the fridge for at least 15 minutes (or up to 2 hours for more flavor).
  3. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  4. Place the marinated chicken pieces in the air fryer basket in a single layer. Cook for 10-12 minutes, shaking the basket halfway through.
  5. Use a meat thermometer to check that the chicken has reached an internal temperature of 165°F (75°C). If needed, cook for an additional 2-3 minutes.
