- 2 cups cooked chicken, shredded or diced
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 8 ounces egg noodles
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables start to soften.
- Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
- Pour in the chicken broth and add the shredded chicken, dried thyme, and dried parsley. Bring the mixture to a simmer over medium-high heat.
- Once simmering, add the egg noodles and cook according to package instructions, usually around 6-8 minutes, until tender.
- Reduce the heat to low and stir in the heavy cream. Allow the soup to heat through, but don’t let it boil.
- Season your soup with salt and pepper to taste.
- Once everything is combined and heated through, remove from heat and garnish with fresh parsley if desired.
- Serve immediately in warm bowls.
Notes
For a healthier version, substitute half and half for the heavy cream or use whole grain noodles.
