Description
This creamy pasta salad is a comforting dish loaded with tender pasta, sweet peas, and crispy bacon, all coated in a rich dressing. Perfect for gatherings or cozy nights in.
Ingredients
Scale
- 8 oz (225 g) pasta (rotini or fusilli recommended)
- 1 cup (150 g) frozen peas
- 6 slices bacon, cooked and crumbled
- 1 cup (240 ml) mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- Optional: Chopped green onions or fresh herbs for garnish
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, about 8-10 minutes.
- In the last 2-3 minutes of cooking the pasta, add the frozen peas to the boiling water.
- Once the pasta and peas are cooked, drain them in a colander and rinse under cold water to stop the cooking process. Let them cool for a few minutes.
- While the pasta and peas are cooling, cook the bacon in a frying pan over medium heat until crispy. Remove from the pan and place on a paper towel to drain excess grease. Once cooled, crumble the bacon into small pieces.
- In a large mixing bowl, combine the cooled pasta and peas, crumbled bacon, mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Stir everything together until well combined.
- Taste and adjust seasoning as needed.
- Cover the bowl with plastic wrap or a lid and chill the pasta salad in the refrigerator for at least 30 minutes before serving.
- When ready to serve, give the pasta salad a good stir and garnish with chopped green onions or fresh herbs if desired.
