Creamy Pasta Salad with Peas and Bacon

Description

This creamy pasta salad is a comforting dish loaded with tender pasta, sweet peas, and crispy bacon, all coated in a rich dressing. Perfect for gatherings or cozy nights in.


Ingredients

  • 8 oz (225 g) pasta (rotini or fusilli recommended)
  • 1 cup (150 g) frozen peas
  • 6 slices bacon, cooked and crumbled
  • 1 cup (240 ml) mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Optional: Chopped green onions or fresh herbs for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, about 8-10 minutes.
  2. In the last 2-3 minutes of cooking the pasta, add the frozen peas to the boiling water.
  3. Once the pasta and peas are cooked, drain them in a colander and rinse under cold water to stop the cooking process. Let them cool for a few minutes.
  4. While the pasta and peas are cooling, cook the bacon in a frying pan over medium heat until crispy. Remove from the pan and place on a paper towel to drain excess grease. Once cooled, crumble the bacon into small pieces.
  5. In a large mixing bowl, combine the cooled pasta and peas, crumbled bacon, mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Stir everything together until well combined.
  6. Taste and adjust seasoning as needed.
  7. Cover the bowl with plastic wrap or a lid and chill the pasta salad in the refrigerator for at least 30 minutes before serving.
  8. When ready to serve, give the pasta salad a good stir and garnish with chopped green onions or fresh herbs if desired.

Notes

This pasta salad can be made a day in advance for better flavor. Customize with your favorite vegetables or proteins.
