  • 2 stalks celery, diced (optional)
  • 1 medium carrot, peeled and diced
  • 2 tbsp unsalted butter
  • 4 cups low-sodium vegetable broth (or chicken broth)
  • 1 cup whole milk
  • 1/3 cup sour cream (or Greek yogurt)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • Shredded cheddar cheese, for topping (optional)
  • Chopped fresh chives or green onions, for garnish

Instructions

  1. Peel and dice potatoes into 1-inch cubes. Chop onion, celery, and carrot. Mince garlic. Measure out broth, milk, and seasonings.
  2. In a large soup pot, melt butter over medium heat. Add onion, celery, and carrot. Sauté until onion is soft and golden, about 7 minutes. Stir in garlic and cook for 1 minute.
  3. Add diced potatoes and pour in broth. Scrape up any browned bits from the bottom of the pot.
  4. Add thyme, bay leaf, salt, and pepper. Bring to a gentle boil, then reduce heat to low. Cover and simmer until potatoes are fork-tender, 18-22 minutes.
  5. Remove bay leaf. Use an immersion blender to puree the soup until creamy and smooth, or blend half for a chunkier texture. If using a regular blender, cool soup slightly and blend in batches.
  6. Stir in milk and sour cream. Warm gently over low heat—do not boil. Taste and adjust seasoning as needed.
  7. Ladle soup into bowls. Top with shredded cheddar, chives or green onions, and extra black pepper. Serve hot.

Notes

For vegan soup, use olive oil, plant-based milk, and dairy-free toppings. Adjust thickness by adding more broth or milk. Soup thickens as it sits; loosen with extra liquid when reheating. For extra flavor, caramelize onions well and add a splash of vinegar or lemon juice at the end.
