- 2 lbs (about 4 medium) Yukon Gold or russet potatoes, peeled and diced
- 1 medium onion, finely chopped
- 2–3 cloves garlic, minced
- 2 stalks celery, diced (optional)
- 1 medium carrot, peeled and diced
- 2 tbsp unsalted butter
- 4 cups low-sodium vegetable broth (or chicken broth)
- 1 cup whole milk
- 1/3 cup sour cream (or Greek yogurt)
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1 bay leaf
- Shredded cheddar cheese, for topping (optional)
- Chopped fresh chives or green onions, for garnish
Instructions
- Peel and dice potatoes into 1-inch cubes. Chop onion, celery, and carrot. Mince garlic. Measure out broth, milk, and seasonings.
- In a large soup pot, melt butter over medium heat. Add onion, celery, and carrot. Sauté until onion is soft and golden, about 7 minutes. Stir in garlic and cook for 1 minute.
- Add diced potatoes and pour in broth. Scrape up any browned bits from the bottom of the pot.
- Add thyme, bay leaf, salt, and pepper. Bring to a gentle boil, then reduce heat to low. Cover and simmer until potatoes are fork-tender, 18-22 minutes.
- Remove bay leaf. Use an immersion blender to puree the soup until creamy and smooth, or blend half for a chunkier texture. If using a regular blender, cool soup slightly and blend in batches.
- Stir in milk and sour cream. Warm gently over low heat—do not boil. Taste and adjust seasoning as needed.
- Ladle soup into bowls. Top with shredded cheddar, chives or green onions, and extra black pepper. Serve hot.
Notes
For vegan soup, use olive oil, plant-based milk, and dairy-free toppings. Adjust thickness by adding more broth or milk. Soup thickens as it sits; loosen with extra liquid when reheating. For extra flavor, caramelize onions well and add a splash of vinegar or lemon juice at the end.
