- 2 pounds baby or Yukon Gold potatoes, halved or quartered
- 200 grams block feta cheese, preferably Greek
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary or thyme, chopped
- Salt & pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve or quarter the potatoes, aiming for uniform pieces.
- In a mixing bowl, combine the halved potatoes with olive oil, minced garlic, fresh herbs, salt, and pepper. Toss well to coat.
- Spread the seasoned potatoes in a single layer on a large baking sheet.
- Place the block of feta in the center of the potatoes and drizzle a little olive oil over it.
- Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy, and the feta is soft.
- Remove from the oven and let cool for a few minutes before serving.
