  • 2 pounds baby or Yukon Gold potatoes, halved or quartered
  • 200 grams block feta cheese, preferably Greek
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary or thyme, chopped
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve or quarter the potatoes, aiming for uniform pieces.
  3. In a mixing bowl, combine the halved potatoes with olive oil, minced garlic, fresh herbs, salt, and pepper. Toss well to coat.
  4. Spread the seasoned potatoes in a single layer on a large baking sheet.
  5. Place the block of feta in the center of the potatoes and drizzle a little olive oil over it.
  6. Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy, and the feta is soft.
  7. Remove from the oven and let cool for a few minutes before serving.
