Description
This Delicious Date Night Mushroom Fettuccine Alfredo is a culinary experience that combines the earthiness of mushrooms with the creamy texture of Alfredo sauce, perfect for a cozy dinner. It’s simple enough to whip up in just 30 minutes!
Ingredients
Scale
- 12 ounces fettuccine, dried or fresh
- 2 tablespoons olive oil
- 8 ounces fresh mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- Salt, to taste
- Pepper, to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions
- In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente (about 8-10 minutes). Reserve 1 cup of pasta water before draining, and then drain the fettuccine using a colander.
- In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook for about 5-7 minutes, stirring occasionally, until they are golden brown and tender. Stir in the minced garlic for the last minute of cooking.
- Lower the heat and pour in the heavy cream, stirring to combine. Let it simmer for about 2-3 minutes until slightly thickened. Add the grated Parmesan cheese, stirring until melted and creamy.
- Add the drained fettuccine to the skillet with the Alfredo sauce. Toss to coat the pasta evenly. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.
- Season with salt and pepper to taste. Serve immediately, garnished with fresh parsley if desired.
Notes
For a lighter version, consider using half-and-half instead of heavy cream or trying a cauliflower-based Alfredo sauce.
