  • 1/2 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) ground ginger
  • 1/8 tsp (0.5g) ground nutmeg (optional)
  • Pinch ground cloves
  • 12 tbsp (15-30g) brown sugar or maple syrup (to taste)
  • 1/2 tsp (2ml) vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Gather all ingredients and equipment. Ensure pumpkin puree is smooth.
  2. Pour apple juice, apricot nectar (or peach juice), cold water, and lemon juice into a large pitcher. Whisk gently to combine.
  3. Add pumpkin puree and whisk or blend until completely smooth.
  4. Sprinkle in cinnamon, ginger, nutmeg, and cloves. Whisk well to avoid clumps.
  5. Add brown sugar or maple syrup, starting with less and tasting as you go. Add a pinch of salt and vanilla extract if using. Whisk until dissolved.
  6. Taste and adjust: add more water for thinner juice, more lemon for brightness, or more apple juice to mellow spices.
  7. Optional: Strain through a fine mesh strainer for a smooth finish.
  8. Cover and refrigerate for at least 1 hour to let flavors meld. Alternatively, serve immediately over ice.
  9. Pour chilled pumpkin juice into glasses or jars. Garnish with cinnamon stick or sprinkle of ground cinnamon if desired.
